Loaded Nachos - Brisket or Roast


Ingredients

  • 1-2 cups leftover shredded brisket or BBQ beef roast

  • BBQ Sauce (your favorite)

  • tortilla Chips

  • 1/2 cup corn drained

  • 1/2 cup black beans drained and rinsed

  • 2 cups shredded cheese of your choice

  • 1/3 cup finely chopped red onion

  • 1/2 cup pico de gallo or salsa

  • 2 tablespoons chopped fresh

  • 1 can sliced black olives

  • 1 avacado diced

  • green onions

  • 1/4 cup sour cream


Instructions

  • Preheat oven 375 degrees

  • If brisket is dry toss it with your favorite BBQ sauce

  • Spread tortilla chips on a baking sheet.

  • Top wtih brisket, corn, black beans and cheese. Place in oven for 5 minutes or until cheese is melted.

  • Remove from oven, divide among plates and top with your preferred toppings.
