1-2 cups leftover shredded brisket or BBQ beef roast
BBQ Sauce (your favorite)
1/2 cup corn drained
1/2 cup black beans drained and rinsed
2 cups shredded cheese of your choice
1/3 cup finely chopped red onion
1/2 cup pico de gallo or salsa
2 tablespoons chopped fresh
1 can sliced black olives
1 avacado diced
1/4 cup sour cream
Preheat oven 375 degrees
If brisket is dry toss it with your favorite BBQ sauce
Spread tortilla chips on a baking sheet.
Top wtih brisket, corn, black beans and cheese. Place in oven for 5 minutes or until cheese is melted.
Remove from oven, divide among plates and top with your preferred toppings.
