Ingredient
1 pound Pasture to Plate Co. lean ground beef
1/2 cup yellow or white onion finely chopped
1/4 cup quick oats
2 garlic cloves minced
1 egg
1/4 cup parmesan cheese finely grated
3 Tbsp. ketchup
1 tsp. salt
1/4 tsp. pepper
1 Tbsp. parsley minced (or about 1/2 Tbsp. dried)
Instructions
Preheat oven to 400ºF. Spray a large cookie sheet with cooking spray.
Mix together onion, bread crumbs, garlic, egg, cheese, ketchup, salt, pepper and parsley in a large mixing bowl.
Add in ground beef and mix gently until combined. Do not overwork. Form into 1-inch balls (I use my cookie scoop) and place on prepared cookie sheet. For easy cleanup line the baking sheet with aluminum foil.
Bake in preheated oven for 15-20 minutes, or until meatballs are browned and cooked through.
Add your favorite BBQ sauce the last 5 minutes of baking.
Note: I always at least double this recipe and put the extras in the freezer to use for quick BBQ meatballs, meatball subs or spaghetti & meatballs. These are also perfect to throw into the crockpot on warm with your favorite sauce to serve to a crowd.
