Basic Meatball - Ground Beef


Ingredient

  • 1 pound Pasture to Plate Co. lean ground beef

  • 1/2 cup yellow or white onion finely chopped

  • 1/4 cup quick oats

  • 2 garlic cloves minced

  • 1 egg

  • 1/4 cup parmesan cheese finely grated

  • 3 Tbsp. ketchup

  • 1 tsp. salt

  • 1/4 tsp. pepper

  • 1 Tbsp. parsley minced (or about 1/2 Tbsp. dried)

Instructions

  • Preheat oven to 400ºF. Spray a large cookie sheet with cooking spray.

  • Mix together onion, bread crumbs, garlic, egg, cheese, ketchup, salt, pepper and parsley in a large mixing bowl.

  • Add in ground beef and mix gently until combined. Do not overwork. Form into 1-inch balls (I use my cookie scoop) and place on prepared cookie sheet. For easy cleanup line the baking sheet with aluminum foil.

  • Bake in preheated oven for 15-20 minutes, or until meatballs are browned and cooked through.

  • Add your favorite BBQ sauce the last 5 minutes of baking.

Note: I always at least double this recipe and put the extras in the freezer to use for quick BBQ meatballs, meatball subs or spaghetti & meatballs. These are also perfect to throw into the crockpot on warm with your favorite sauce to serve to a crowd.
