2 pounds Pasture to Plate Co. ground beef
2 packages taco seasoning
2 14 oz cans corn (drained)
2 15 oz cans black beans (drained and rinsed)
2 15 oz cans pinto beans (drained and rinsed)
2 15 oz cans kidney beans (drained and rinsed)
2 10 oz cans Rotel
1/4 cup water
Add 2 cups of broth for a soupier version
In a large pot over medium heat, cook beef until brown; drain. Return beef to pot. Stir in taco seasoning and 1/4 cup of water cooking about 2 minutes. Stir in beans (drained and rinsed), corn (drained) & rotel tomatos. Simmer 30 minutes, stiring occasionally.
Top with sour cream, avacado, cilantro, jalapenos, cheese & onions.
Serve with tortilla chips
This receipe will feed a crowd. Cut in half for smaller groups or freeze leftovers.
