Beef Tortilla Soup


Ingredients

  • 2 pounds Pasture to Plate Co. ground beef

  • 2 packages taco seasoning

  • 2 14 oz cans corn (drained)

  • 2 15 oz cans black beans (drained and rinsed)

  • 2 15 oz cans pinto beans (drained and rinsed)

  • 2 15 oz cans kidney beans (drained and rinsed)

  • 2 10 oz cans Rotel

  • 1/4 cup water

  • Add 2 cups of broth for a soupier version

Optional Toppings

  • Avacado

  • Red Onion

  • Cilantro

  • Sour Cream

  • Cheese

  • Jalapeno

  • Tortilla Chips

Directions

  • In a large pot over medium heat, cook beef until brown; drain. Return beef to pot. Stir in taco seasoning and 1/4 cup of water cooking about 2 minutes. Stir in beans (drained and rinsed), corn (drained) & rotel tomatos. Simmer 30 minutes, stiring occasionally.

  • Top with sour cream, avacado, cilantro, jalapenos, cheese & onions.

  • Serve with tortilla chips

This receipe will feed a crowd. Cut in half for smaller groups or freeze leftovers.
