Pepper Beef Medallions - Eye of Round Roast


1 Pasture to Plate Co. Eye of Round Roast

1 tablespoon oil

1 teaspoons dried oregano

1 teaspoon paprika

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon pepper

1/2 teaspoon white pepper

1/8 to 1/4 teaspoon cayenne pepper


Thaw and bring eye of round roast to room temperature. Rub entire roast with oil. Combine seasonings and rub over the entire roast. Place on a rack in a roasting pan. Bake uncovered, at 425 degrees until the meat is cooked as desired. Allow aproximately 55-60 minutes for medium rare, 62-65 minutes for medium, and 67-70 minutes for well done. Once the roast is removed from the oven let stand for 10 minutes before cutting.

For more instense flavor cover the roast in oil and sesonings and wrap tightly in foil. Place in the refrigerator overnight. Bring to room temperature before cooking.

This recipe would also be suitable for a sirloin tip roast.
